For post 200, I want to share my chocolate chip cookie recipe. These are not just any chocolate chip cookies-they are special. I dare say these are the best chocolate chip cookies you will ever experience, and more importantly than that, i can trace these cookies throughout mine and Scott's entire relationship.
When Scott and I were dating, I went camping with him and his brothers over 4th of July weekend in 2008. I made a huge batch of these cookies for our excursion. I believe both of his brothers decided that I was a great gal with their first bite of cookie.
Before I left for study abroad in Vienna (Fall semester 2008), I made and froze at least four batches of these cookies for Scott. Every time he missed me, the plan was for him to eat a cookie and think of me with each delicious bite. As I called him from the San Francisco airport, before my final departure to Europe, he confessed that the cookies were already gone. He and his roommates had thoroughly enjoyed every single cookie.
Once we got married, Scott requested these cookies far too often. I have a love hate reltionship with my chocolate chip cookies. They are delicious, so I love them. They are buttery, chocolaty , and addicting, so I hate them. I would make them every time friends came over for dinner, every time we had a family gathering, and every time Scott needed to take treats into work. He uses these cookies to break the ice with every new job and set of coworkers (there have been a lot-Fidelity, XanGo, Goldman Sach's, and you probably didn't know this, but he is now at England Logistics. I am not complaining-with every new job, he has received a promotion and increase in pay-just stating).
And lastly, over the past few years, I have been able to use these cookies to get just about anything I could ever want. Scott, I will make the cookies if you... These cookies are truly a great tool in our marriage.
Anyways, as you can see from my abridged version of the Lalor's Life and History of the Chocolate Chip Cookie, we love these cookies.
So here you have it, an amazingly delicious and simple chocolate chip cookie recipe. Enjoy!
The Best Chocolate Chip Cookie Ever
2 cubes butter, softened
1 C brown sugar
1 C sugar
2 eggs
Mix the above ingredients together until they are fluffy, and a lighter color (this will take about 1-2 minutes in a Kitchenaid)
1 tsp baking soda
1 1/2 tsp vanilla (the real stuff from Mexico, if possible)
1 tsp salt
1 small package of vanilla pudding mix
Add the above ingredients onto the sugar egg mixture. Blend for a few seconds, just to make sure all of the ingredients are incorporated.
3 C flour
1 C oatmeal (not the quick oats)
1/2 package of milk chocolate chips (The big Ghiradelli or Guittard milk chocolate chips are crucial here-don't go cheap on me)
Add the flour gradually, as you are mixing the batter. I usually add 1 cup at a time. Once the flour is blended in, add the cup of oats, and the chocolate chips. Do not over blend. Roll dough into 1-in balls and put on an ungreased cookie sheet.
Bake at 350 for 11-12 minutes, or until the tops of the cookies are slightly brown. The time will change depending on the size of your cookies The cookies will be very soft when you take them out of the oven, so let them rest on the pan for a few minutes before transferring them to the cooling rack.
Make sure you enjoy a hot cookie, a warm cookie, and a room temperature cookie-all with a big glass of milk!
