Smokey Cream Cheese Stuffed Chicken
Filling:
1-8 oz package cream cheese, softened (I used fat free)
1/2 C ham, chopped into thin shreds
2 green onions, chopped
1 T minced chipotle pepper in adobe sauce
1/2 t salt
1/2 t smoked paprika (I used regular, b/c I don't have smoked paprika)
Chicken:
4 chicken breasts
1/3 C flour
1 egg, beaten
1 C panko bread crumbs
1/4 C olive oil
1. Beat all filling ingredients until well combined
2. Cut a pocket in each chicken breast
3. Stuff the chicken with filling. You can really pack the chicken pockets with creamy goodness, your family will thank you for it later!
4. Fasten the sides of the chicken with toothpicks
5. Dip each stuffed chicken breast into the beaten egg, then the flour, then the panko bread crumbs.
6. Heat a large skillet over medium heat. When the pan is hot, add the olive oil. Allow the oil to heat up before placing your chicken into the pan.
7. Listen for the perfect crack, crack, sizzle, sizzle.
8. Brown the chicken on both sides. Transfer to chicken to a greased 9x13 pan.
9. Bake, uncovered at 400 degres for 20-25 minutes, or until the chicken is cooked thoroughly.
10. Let the chicken rest for a few minutes, and then enjoy!
